  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp cumin seeds, toasted
  • 1 tsp coriander powder
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Water or beef broth (enough to cover the beef)

Instructions

  1. Season beef chunks with salt and pepper.
  2. In a large pot or Dutch oven, heat vegetable oil over medium heat. Sauté onions, garlic, and ginger until golden brown (about 5 minutes).

  5. Pour in coconut milk and enough water or broth to cover the meat completely. Bring to a gentle boil; then reduce heat to low and simmer for 1.5-2 hours until tender.
