  • 4 skin-on salmon fillets (about 6 oz each)
  • 3 tbsp white or yellow miso paste
  • 3 tbsp unsalted butter, softened
  • 4 scallions, finely chopped
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon (about 2 tbsp)
  • 1 tbsp olive oil
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix together the softened butter and miso paste until smooth.
  3. Place the salmon fillets on the prepared baking sheet and spread the miso butter mixture generously over each fillet.
  4. Bake for 12-15 minutes or until the salmon flakes easily with a fork.
  5. Meanwhile, heat olive oil in a skillet over medium heat. Add chopped scallions and sauté until fragrant. Remove from heat and mix in parsley and lemon juice.
  6. Serve the salmon drizzled with the scallion salsa verde.
