  • 2 cups butternut squash, peeled and cubed
  • 4 slices thick-cut turkey bacon
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Spread cubed butternut squash on the baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes until tender.
  3. In a large pot over medium heat, cook turkey bacon until crispy. Remove and drain on paper towels.
