- 2 tbsp capers, drained
- 1/4 cup freshly squeezed lemon juice
- 1 cup heavy cream
- Salt and pepper to taste
- 1/4 cup toasted pine nuts (optional)
- Fresh parsley for garnish
Instructions
- Cook the pasta in salted boiling water until al dente; reserve 1 cup of pasta water before draining.
- In a skillet over medium-high heat, add olive oil. Season salmon fillets with salt and pepper, then sear skin-side down for about 4-5 minutes per side until cooked through. Remove from skillet and set aside.
- Lower heat and add minced garlic to the same skillet. Sauté for 30 seconds, then stir in capers and lemon juice. Let simmer for 1-2 minutes.
- Add heavy cream and stir until well combined; simmer for another minute.
- Toss cooked pasta into the sauce, adding reserved pasta water as needed for consistency. Gently flake in salmon as you mix.
