  • 2 (6 oz) salmon fillets
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp capers, drained
  • 1/4 cup freshly squeezed lemon juice
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1/4 cup toasted pine nuts (optional)
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in salted boiling water until al dente; reserve 1 cup of pasta water before draining.
  2. In a skillet over medium-high heat, add olive oil. Season salmon fillets with salt and pepper, then sear skin-side down for about 4-5 minutes per side until cooked through. Remove from skillet and set aside.
  3. Lower heat and add minced garlic to the same skillet. Sauté for 30 seconds, then stir in capers and lemon juice. Let simmer for 1-2 minutes.
  4. Add heavy cream and stir until well combined; simmer for another minute.
  5. Toss cooked pasta into the sauce, adding reserved pasta water as needed for consistency. Gently flake in salmon as you mix.
  6. Serve immediately, garnished with fresh parsley and toasted pine nuts if desired.
