- 3–4 boneless, skinless chicken breasts (1.5 lbs)
- 2 medium carrots, diced
- 1 cup frozen peas
- 2 celery stalks, diced
- 1 medium onion, chopped
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- 1 package puff pastry sheets (2 sheets)
Instructions
- Preheat oven to 400°F (200°C). Spray a large baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper and place them in the dish.
- In a skillet over medium heat, sauté onions, carrots, and celery in olive oil until softened (about 5 minutes).
- Add seasoned chicken to the skillet along with half of the chicken broth. Cover and cook for 15-20 minutes until chicken is cooked through.
- In a bowl, whisk together heavy cream, remaining chicken broth, thyme, garlic powder, salt, and pepper. Pour over the chicken and vegetables in the baking dish.
- Unroll thawed puff pastry on top of the filling. Cut slits into the pastry for steam to escape.
- Bake for 25-30 minutes or until pastry is golden brown.
