  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1 package puff pastry sheets (2 sheets)

Instructions

  1. Preheat oven to 400°F (200°C). Spray a large baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper and place them in the dish.
  3. In a skillet over medium heat, sauté onions, carrots, and celery in olive oil until softened (about 5 minutes).
  4. Add seasoned chicken to the skillet along with half of the chicken broth. Cover and cook for 15-20 minutes until chicken is cooked through.
  5. In a bowl, whisk together heavy cream, remaining chicken broth, thyme, garlic powder, salt, and pepper. Pour over the chicken and vegetables in the baking dish.
  6. Unroll thawed puff pastry on top of the filling. Cut slits into the pastry for steam to escape.
  7. Bake for 25-30 minutes or until pastry is golden brown.
