  • 1 (14.75 oz) can wild-caught salmon, drained and flaked
  • 1 cup plain breadcrumbs (or panko for extra crunch)
  • 2 large eggs, beaten
  • 1 small onion, finely chopped
  • 1/2 cup bell pepper, diced (red or green)
  • 2 tsp fresh dill weed (or 1 tsp dried)
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Drain the canned salmon and place it in a large mixing bowl. Flake with a fork.
  2. Add breadcrumbs, beaten eggs, chopped onion, diced bell pepper, dill weed, lemon juice, salt, and pepper. Mix until combined.
  3. Shape the mixture into patties about 2-3 inches wide and half an inch thick.
  4. Heat oil in a skillet over medium heat until shimmering.
  5. Fry each patty for 4-5 minutes on each side until golden brown.
  6. Transfer cooked patties to paper towels to drain excess oil before serving.
