  • 3/4 cup whole milk (or almond/oat milk)
  • 2 large eggs (room temperature)
  • 2 tbsp melted unsalted butter
  • 1 cup fresh strawberries (sliced)

Instructions

  1. Preheat a non-stick skillet over medium heat and lightly grease it.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix milk, eggs, and melted butter. Pour wet ingredients into dry and stir until just combined; small lumps are okay.
  3. Gently fold in sliced strawberries.
  4. Pour about half a cup of batter onto the skillet for each pancake. Cook until bubbles form on top (about 2-3 minutes), then flip and cook until golden brown (1-2 minutes).
  5. Serve warm with additional strawberries and maple syrup.
