  • 2 lbs beef chuck roast, cut into large cubes
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 1 cup high-quality tomato sauce
  • ¼ cup low-sodium soy sauce
  • 2 bay leaves
  • 2 medium carrots, sliced
  • 2 cups water or beef broth

Instructions

  1. Heat oil in a large pot over medium-high heat. Sear the beef cubes until browned on all sides; then set aside.
  2. In the same pot, sauté onions and garlic until fragrant and translucent.
  3. Return seared beef to the pot along with carrots, tomato sauce, soy sauce, bay leaves, and water/broth. Stir well.
  4. Bring to a gentle boil, then reduce heat to low and cover. Simmer for about 2 hours until the beef is tender.
