  • 1 cup fresh passionfruit pulp (about 68 fruits)
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup coconut cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix softened butter and sugar until creamy. Gradually add flour until a dough forms.
  3. Press the dough into a tart pan evenly across the bottom and up the sides. Bake for 15-20 minutes until lightly golden. Cool completely.
  4. Scoop fresh passionfruit pulp into a bowl. In another bowl, whisk eggs, sugar, and coconut cream until smooth. Fold in passionfruit pulp.
  5. Pour filling into the cooled crust and bake for an additional 25-30 minutes, or until set but slightly jiggly in the center.
  6. Allow to cool at room temperature before chilling in the refrigerator for at least one hour. Serve garnished with fresh fruit or whipped cream.
