- 1 cup fresh passionfruit pulp (about 6–8 fruits)
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 cup coconut cream
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix softened butter and sugar until creamy. Gradually add flour until a dough forms.
- Press the dough into a tart pan evenly across the bottom and up the sides. Bake for 15-20 minutes until lightly golden. Cool completely.
- Scoop fresh passionfruit pulp into a bowl. In another bowl, whisk eggs, sugar, and coconut cream until smooth. Fold in passionfruit pulp.
- Pour filling into the cooled crust and bake for an additional 25-30 minutes, or until set but slightly jiggly in the center.
- Allow to cool at room temperature before chilling in the refrigerator for at least one hour. Serve garnished with fresh fruit or whipped cream.
