Ingredients
Scale
- 6 pork sausages (about 1 pound)
- 2 pounds Yukon Gold potatoes
- 4 tablespoons unsalted butter
- 1/2 cup whole milk
- 1 medium onion
- 2 tablespoons vegetable oil (or butter)
- 2 cups beef stock
Instructions
- Peel and chop the Yukon Gold potatoes into even pieces. Place them in a pot of cold salted water and bring to a boil. Cook until tender, about 15-20 minutes.
- While the potatoes cook, heat vegetable oil in a skillet over medium heat. Cook the sausages until browned on all sides, approximately 10-12 minutes. Remove from skillet and set aside.
- In the same skillet, add chopped onions and sauté until golden brown, about 5 minutes.
- Pour in beef stock to deglaze the skillet, stirring well with the onions. Simmer for about 5 minutes until slightly thickened; season with salt and pepper.
- Drain the potatoes once fork-tender and return them to the pot. Add butter and milk, mashing until creamy and smooth.
- Serve generous portions of mashed potatoes topped with sausages, drizzling warm gravy over everything.
