Ingredients
Scale
- 1 pre-made pie crust (9-inch)
- 2 cups whole milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 2 tsp ground cinnamon
- 2 tsp pure vanilla extract
- 4 large eggs
- 1/4 tsp grated nutmeg
Instructions
- Preheat your oven to 375°F (190°C). Roll out the pie crust into a dish, trim excess dough, and poke holes in the bottom. Bake for about 15 minutes until lightly golden.
- In a medium saucepan over medium heat, combine the whole milk and heavy cream until warmed but not boiling.
- In a separate bowl, whisk together the eggs, sugar, cinnamon, vanilla extract, and nutmeg until smooth. Gradually add the warm milk mixture while whisking to temper the eggs.
- Pour everything back into the saucepan over low heat and stir gently until thickened (5-7 minutes). Remove from heat.
- Pour the custard into the pre-baked crust and bake at 350°F (175°C) for 35-40 minutes until set around edges but slightly jiggly in the center. Cool at room temperature before refrigerating for at least two hours.
