  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 2 tsp ground cinnamon
  • 2 tsp pure vanilla extract
  • 4 large eggs
  • 1/4 tsp grated nutmeg

Instructions

  1. Preheat your oven to 375°F (190°C). Roll out the pie crust into a dish, trim excess dough, and poke holes in the bottom. Bake for about 15 minutes until lightly golden.
  2. In a medium saucepan over medium heat, combine the whole milk and heavy cream until warmed but not boiling.
  3. In a separate bowl, whisk together the eggs, sugar, cinnamon, vanilla extract, and nutmeg until smooth. Gradually add the warm milk mixture while whisking to temper the eggs.
  4. Pour everything back into the saucepan over low heat and stir gently until thickened (5-7 minutes). Remove from heat.
  5. Pour the custard into the pre-baked crust and bake at 350°F (175°C) for 35-40 minutes until set around edges but slightly jiggly in the center. Cool at room temperature before refrigerating for at least two hours.
