  • 2 cups cubed butternut squash

  2. Rinse and dry kale; remove stems and chop into bite-sized pieces. Place in a large mixing bowl.
  3. Whisk together olive oil, balsamic vinegar, salt, and pepper in a small bowl for the dressing.
  4. Once roasted squash cools slightly, add it to the bowl with kale along with pomegranate seeds, walnuts, and feta; toss gently.
  5. Drizzle dressing over salad before serving; mix gently until well coated.
