Ingredients

  • 250g Halloumi, cubed
  • 400g Pasta (Rigatoni or Penne)
  • 3 tbsp Olive Oil
  • 4 cloves Garlic, minced
  • 2 cups Fresh Spinach
  • Zest of 1 Lemon
  • Fresh black pepper to taste

Instructions

  1. Boil a large pot of salted water and cook pasta until nearly al dente.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add halloumi cubes and sear for 3 minutes per side until golden brown; remove and set aside.
  4. In the same skillet, sauté minced garlic for 1 minute until fragrant.
  5. Add spinach to the skillet and stir until wilted.
  6. Toss the drained pasta and seared halloumi into the skillet.
  7. Add a splash of pasta water and lemon zest, tossing everything together for 2 minutes.
  8. Season with black pepper and serve immediately.
