  • 8 oz thick rice noodles
  • 1 cup diced pork belly
  • 4 cloves garlic, minced
  • 8 oz shrimp, peeled and deveined
  • 2 hard-boiled eggs, sliced
  • 2 tbsp chili paste (adjust to taste)
  • 2 tbsp fish sauce
  • 2 tbsp lemon juice

Instructions

  1. Boil water in a large pot. Cook rice noodles according to package instructions until al dente. Drain and set aside.
  2. In a pan over medium heat, cook diced pork belly until golden brown. Remove excess fat but retain some for flavor.
  3. Add minced garlic to the pan and sauté for about one minute until fragrant.
  4. Stir in shrimp and cook until pink and opaque.
  5. Combine chili paste, fish sauce, and lemon juice in a bowl; pour over the cooked meat in the pan and stir well.
  6. Gently toss the cooked rice noodles into the pan with meat and sauce until evenly coated.
  7. Serve on plates garnished with sliced hard-boiled eggs.
