  • 2 tbsp (30ml) olive oil, plus more for sautéing
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp freshly cracked black pepper
  • 1 bunch (about 1 lb/450g) fresh asparagus, trimmed

Instructions

  1. In a bowl, mix lemon juice, lemon zest, olive oil, garlic powder, salt, and black pepper. Marinate the chicken breasts for at least 30 minutes.
  2. Preheat oven to 400°F (200°C).
  3. Rinse asparagus under cold water and trim tough ends.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the marinated chicken on each side for about 3-4 minutes until golden brown.
  5. Add asparagus around the chicken in the skillet and drizzle with additional olive oil if desired.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C) and asparagus is tender yet crisp.
