- 1/2 tsp freshly cracked black pepper
- 1 bunch (about 1 lb/450g) fresh asparagus, trimmed
Instructions
- In a bowl, mix lemon juice, lemon zest, olive oil, garlic powder, salt, and black pepper. Marinate the chicken breasts for at least 30 minutes.
- Preheat oven to 400°F (200°C).
- Rinse asparagus under cold water and trim tough ends.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the marinated chicken on each side for about 3-4 minutes until golden brown.
- Add asparagus around the chicken in the skillet and drizzle with additional olive oil if desired.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C) and asparagus is tender yet crisp.
