- 2 medium zucchinis, spiralized
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup carrots, julienned
- 3 cloves garlic, minced
- 3 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tbsp sesame oil (plus more for cooking)
- 2 green onions, thinly sliced
Instructions
- Wash and prepare all vegetables: spiralize the zucchinis, slice the bell peppers, and julienne the carrots.
- Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add minced garlic and sauté until fragrant.
- Add zucchini noodles to the skillet first; stir-fry for about 2 minutes before adding bell peppers and carrots. Cook for another 3 minutes until tender-crisp.
- In a small bowl, mix soy sauce, rice vinegar, honey or maple syrup, and remaining sesame oil. Pour over veggies and toss to coat evenly.
- Garnish with sliced green onions before serving hot.
