  • 2 medium zucchinis, spiralized
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup carrots, julienned
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp sesame oil (plus more for cooking)
  • 2 green onions, thinly sliced

Instructions

  1. Wash and prepare all vegetables: spiralize the zucchinis, slice the bell peppers, and julienne the carrots.
  2. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add minced garlic and sauté until fragrant.
  3. Add zucchini noodles to the skillet first; stir-fry for about 2 minutes before adding bell peppers and carrots. Cook for another 3 minutes until tender-crisp.
  4. In a small bowl, mix soy sauce, rice vinegar, honey or maple syrup, and remaining sesame oil. Pour over veggies and toss to coat evenly.
  5. Garnish with sliced green onions before serving hot.
