- 1 cup dried black-eyed peas (or 2 cans, 15 oz each, drained and rinsed)
- 12 oz Andouille sausage, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 2 tablespoons Cajun seasoning (adjust to taste)
- 4 cups chicken broth (or vegetable broth)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- If using dried black-eyed peas, rinse and soak them overnight. For canned peas, drain and rinse.
- In a large pot over medium heat, heat the olive oil. Add the diced onion and sauté until translucent (about 3-4 minutes). Then add minced garlic and diced bell pepper; cook for another 2 minutes until fragrant.
- Add the sliced Andouille sausage to the pot and cook until browned (approximately 5-7 minutes).
- Stir in Cajun seasoning along with salt and pepper to taste.
- Add the black-eyed peas and enough chicken broth to cover them by about an inch. Bring to a boil.
- Reduce heat to low, cover partially with a lid, and let simmer for 30-40 minutes if using dried peas or 15-20 minutes if using canned peas. Stir occasionally until everything is cooked through.
