8 cups chopped Romaine lettuce
2 cooked chicken breasts, diced
4 hard-boiled eggs, sliced
6 slices cooked crispy bacon, chopped
1 large avocado, diced
1 cup cherry tomatoes, halved
1/2 cup crumbled blue cheese
1/4 cup extra virgin olive oil
2 tbsp apple cider vinegar
Salt and black pepper to taste
Instructions
Cook chicken breasts in a pan with olive oil until cooked through. Let rest and dice.
Fry bacon until crisp and drain on paper towels. Chop into small pieces.
Boil eggs for 9 minutes, cool in ice water, peel, and slice.
Place chopped Romaine lettuce in a large serving bowl as the base.
Arrange chicken, bacon, eggs, tomatoes, avocado, and blue cheese in rows on top of the lettuce.
Whisk olive oil, apple cider vinegar, salt, and pepper in a separate jar until emulsified.
Drizzle the dressing over the salad just before serving.
