Ingredients

  • 3 lbs Beef Chuck Roast, cut into 2-inch chunks
  • 1.5 lbs Yukon Gold Potatoes, cubed
  • 4 large Carrots, sliced into thick rounds
  • 3 cups Low-sodium Beef Broth
  • 2 tbsp Worcestershire Sauce
  • 1 tbsp Fresh Thyme, chopped
  • 2 tbsp Cornstarch
  • Salt and Pepper to taste
  • 2 tbsp Vegetable Oil

Instructions

  1. Heat oil in a skillet and sear beef chunks on all sides until browned.
  2. Transfer seared beef to the slow cooker.
  3. Add cubed potatoes and carrots on top of the meat.
  4. Whisk cornstarch into beef broth and stir in Worcestershire sauce and thyme.
  5. Pour the liquid over the beef and vegetables.
  6. Cover and cook on Low for 8 hours or High for 4-5 hours.
