  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (mixed colors), sliced
  • ½ cup red onion, thinly sliced
  • ½ cup black or green olives, pitted and halved
  • ½ cup Italian dressing (homemade or store-bought)

Instructions

  1. Cook the rotini pasta in boiling salted water according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, wash and chop the cherry tomatoes, cucumber, bell peppers, and red onion.
  3. In a large mixing bowl, combine the cooked pasta with all prepared vegetables and olives.
  4. Pour Italian dressing over the salad mixture and gently toss until everything is well coated.
