  • 1/2 cup strawberry puree (reduced)
  • 2 tbsp heavy cream
  • 1 tbsp unsalted butter, room temperature
  • 1/4 cup freeze-dried strawberry powder

Instructions

  1. Melt white chocolate and heavy cream using a double boiler.
  2. Simmer strawberry puree until reduced by half.
  3. Fold strawberry reduction and butter into melted chocolate.
  4. Chill the mixture for 4 hours until firm.
  5. Roll the chilled ganache into small spheres.
  6. Dip in melted white chocolate and roll in strawberry powder.
