  • 1 cup bell peppers (mixed red and green), sliced
  • 1 cup carrots, thinly sliced
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 1/4 cup granulated sugar
  • 1/3 cup vinegar (white or cane)
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp cooking oil
  • Salt and pepper to taste

Instructions

  1. Rinse the lapu lapu fillets under cold water and pat dry. Cut into serving pieces; season with salt and pepper.
  2. Heat oil in a large skillet over medium heat. Sauté onions until translucent (about 3 minutes). Add bell peppers and carrots; cook for another 5 minutes until slightly softened.
  3. In a bowl, whisk together sugar, vinegar, soy sauce, and minced garlic. Adjust sweetness to taste.
  4. Pour the sauce over sautéed vegetables in the skillet. Stir gently and simmer for about 5 minutes.
  5. Add seasoned fish fillets; cover and cook on low heat for 8 to 10 minutes or until fish flakes easily.
