  • 1 cup carrots, thinly sliced

  • 4 cloves garlic, minced

  • 1/3 cup vinegar (white or cane)
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp cooking oil
  • Salt and pepper to taste
