A vibrant, herby pasta dish combining fresh basil and mint pesto with sweet garden peas for a refreshing spring meal.

Ingredients

  • 12 oz Pasta (Fusilli or Penne)
  • 2 cups fresh basil leaves
  • 1/2 cup fresh mint leaves
  • 1/3 cup pine nuts, toasted
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1/2 cup extra virgin olive oil
  • 1 cup frozen peas
  • Salt and black pepper to taste
  • Optional: Lemon wedge

Instructions

  1. Boil a large pot of salted water.
  2. Pulse basil, mint, pine nuts, and garlic in a food processor.
  3. Slowly stream in olive oil while blending until smooth.
  4. Stir in Parmesan cheese and season with salt.
  5. Cook pasta according to package directions.
  6. Add frozen peas to the pasta water during the final 3 minutes of cooking.
  7. Drain pasta and peas, reserving 1/2 cup of pasta water.
  8. Toss pasta and peas with the fresh pesto, adding reserved water for creaminess.
