A hearty and bright one-pan meal featuring seared salmon fillets and golden potatoes tossed in a lemon-butter dill sauce.

Ingredients

  • 4 salmon fillets
  • 1 lb Yukon Gold potatoes, diced into 1/2 inch cubes
  • 3 tablespoons salted butter
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1/4 cup fresh dill, chopped
  • 3 cloves garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced potatoes and sauté for 8-10 minutes until golden brown.
  3. Stir in minced garlic and one tablespoon of butter; cook for 1 minute.
  4. Season salmon with salt and pepper and place skin-side down in the pan.
  5. Cook salmon for 4-5 minutes per side until opaque.
  6. Add remaining butter and lemon juice to the pan, basting the fish for the last 3 minutes.
  7. Remove from heat and stir in fresh chopped dill before serving.
