- 1 lb Yukon Gold potatoes, diced into 1/2 inch cubes
- 3 tablespoons salted butter
- 2 tablespoons olive oil
- 1 lemon, juiced
- 1/4 cup fresh dill, chopped
- 3 cloves garlic, minced
- Salt and black pepper to taste
- Heat olive oil in a large skillet over medium-high heat.
- Add diced potatoes and sauté for 8-10 minutes until golden brown.
- Stir in minced garlic and one tablespoon of butter; cook for 1 minute.
- Season salmon with salt and pepper and place skin-side down in the pan.
- Cook salmon for 4-5 minutes per side until opaque.
- Add remaining butter and lemon juice to the pan, basting the fish for the last 3 minutes.
- Remove from heat and stir in fresh chopped dill before serving.
