Ingredients

  • 3.5 cups bread flour
  • 1 cup warm water (110°F)
  • 2.25 tsp instant yeast
  • 1 tbsp sugar
  • 1.5 tsp salt
  • 1/2 cup baking soda
  • 4 cups boiling water (for bath)
  • 4 tbsp butter
  • 1/4 cup flour (for roux)
  • 1 cup amber ale
  • 8 oz sharp cheddar, shredded
  • Coarse sea salt

Instructions

  1. Combine warm water, sugar, and yeast; let sit for 5 minutes.
  2. Mix in bread flour and salt; knead for 5-7 minutes until smooth.
  3. Let dough rise in a greased bowl for 1 hour.
  4. Prepare baking soda bath by dissolving soda in boiling water.
  5. Divide dough into 8 pieces, roll into ropes, and twist into pretzels.
  6. Dip pretzels into soda bath for 10 seconds each.
  7. Place on baking sheet, sprinkle with salt, and bake at 425°F for 12-15 minutes.
  8. Melt butter, whisk in flour, then stir in beer and cheese until smooth.
